About The Staff Member

Dr Eric Kuuna Dery is an astute Food science and technologist specialized in product development and sensory science. In an agrarian country like Ghana where there is a renewed focus on moving the economy from production to manufacturing, Dr E.K Dey’s expertise has become relevant to the changing environment. His passion for the transformation of raw agricultural produce into finished products while understanding the changing consumer tastes and preferences has seen him develop several commercial products like fresh juice, bread, yogurt etc from unlikely raw materials like sweetpotatoes, coconut and oil palm. Dr. E.K Dery’s research is focused on the biotransformation and upcycling of oil palm waste into nutritious edible products to help reduce environmental pollution while offering alternative livelihood for the vulnerable within the oil palm and coconut industry.

As a food scientist, Dr Eric Kuuna Dery is focused on elevating the newly established value-addition division of CSIR-OPRI and helping transform oil palm, coconut and their wastes into highly nutritious and competitive products capable of meeting global standards. His passion for hands-on delivery and practicalizing scientific works has also seen him engaged in several training regimes under the division. Currently, he is assisting in developing modules and training artisanal palm oil millers and farmers on the production of quality palm and coconut oils. He has several publications in reputable scientific journals and is a reviewer. He is also the intellectual property focal person for the CSIR-Oil Palm Research Institute and has a dream to help improve the livelihood of the vulnerable in society through scientific research.
